Some of it's definitely regional, some of it maybe even store-specific. This was the first time I'd seen taco flavor Doritos in a while, so at the very least they're something that a lot of stores around here don't stock. I don't think I'd ever seen them at this particular store. This store also used to have Haribo ginger lemon gummies (one of my favorite candies), but I don't see them at any of the local stores anymore, though I'm sure they still make them. They're even out of them at the nearby German deli/grocery, but that may just be due to COVID-related supply issues.
The disappearance of cajun rice from my nearest Popeye's seems to be a very recent development. When I was there a week and a half ago, it was still on the menu, which they hadn't changed yet. The woman at the counter said that they'd also discontinued the corn (!) and the green beans, but she didn't know whether it was a chain-wide thing or not. Looking at the Grubhub menu for the Berkeley location (half a mile farther from home), it appears that all three of those sides have been discontinued there, too.
