plus they were filming. they have to look decent. a tank top seems inappropriate. don't want any slip-ups or bad angle shots.

Or they're just trying to avoid getting sunburns and they can't carry around umbrellas while recording…

The obvious reply to that would be "sunscreen", but uh. I've been sunburnt while wearing sunscreen before (before the protection wore off, that is). So sunscreen isn't a perfect solution.

And in heat like that they do need to be careful...

Umbrellas aren't much protection either, not against UV. I once had to sit outside all day for a yard sale, and I had an umbrella, but my head and forearms still got sunburned to the point of blistering.

Yuck. I burn extremely easily (my skin is super pale and sensitive) so I try to avoid spending time in the sun as much as possible.

Especially in NZ, where there's a major hole in the Ozone Layer.

I think that could explain why one of the layers would always be long sleeve shirts.

The fabric could be pretty light. You can find those shirts sold in the US as part of a store's summer collection as well. I saw some yesterday.

Loose clothes >>> tight clothes when it's hot and humid outside, so if they're wearing loose open tops like tank tops it'd be like what Amped said above. Bad shots while they're bending over, for example.

They obviously also want to look fashionable, and the shirts go along with the countryside theme.

And the sun, yeah. Even if they don't burn (I've never heard of anyone getting a sunburn when I lived in Thailand... I don't think Asians burn as much), they could get some odd tans.
