Her main point there isn't so much the word order but (mostly) that there are a metric shitton of ways to say "I" in Japanese and only one in English.

Which isn't a fair comparison as word order is less structured in English than in Japanese (Which follows SOV almost to the point of complication I feel ><) so there's only one way to say something in Japanese, with more words while English is the opposite (More ways to say something with less words). If we look at Sakura's example's all of them follow SOV to the letter, while in English is just wherever we want it to be.

As a writer, I found what she said to hit my annoyance button :P

Japanese > English any day in my book. xD Which is what Sakura is going at (though to be fair she doesn't know too much English lol) and I totally agree. xD

Japanese is a pretty language, but English is a far less restrictive one (I think that's why people feel it's harder to learn? All I've heard is horror stories from people who speak English as a second language about what a pain it is.)

As someone who have learnt both English and Japanese, while English is easier in many ways - it's similar to Swedish in some ways etc - I find it much more annoying than Japanese. Japanese of course is difficult (especially those damn verbs) I find its... I don't know. Fine differences in nuances? If that makes sense, are more appealing to me than English is. Probably a preference question more than anything though.

How easy/difficult it is to learn, I think has a lot to do with what your mother language is though.

I think English has a pretty low threshold to be able to get to a conversational level though from just from the sheer exposure, by the time I was in 6th grade my English isn't much worse than my current level(which admittedly isn't saying much xD) thanks to games, books and movies even though no one around me actually speaking the language. Comparatively I still suck at Japanese even after 10+years of anime, games and H!P OTL
